Tex-mex turkey veggie skillet

The perfect taco night upgrade!

Ingredients
- 1 tablespoon canola oil
- 1 onion, diced
- 1/2 green pepper, diced
- 2 carrots, peeled and chopped
- 2 Roma tomatoes, diced
- 454g ground turkey
- 1 tablespoon chilli powder
- 2 teaspoons dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup water
- 1 can (540ml), black beans, drained and rinsed
- 3/4 cup grated cheese
Directions
- Heat up a large skillet over medium heat. Add the oil, onion, green pepper, carrots and tomatoes. Cook, stirring occasionally for six mintes until the vegetables are translucent.
- Push all the vegetables to the edges of the pan and add the ground turkey. Use a wooden spoon to break up the turkey and cook for 10min or until cooked through.
- Stir in the chilli powder, dried oregano, salt, pepper and water and black beans. Bring to a simmer and cook for another 10 minutes.
- Scatter the top of the turkey and veggies with the grated cheese. Serve and enjoy!
