FOR THE POKE

1 Package Extra Firm Tofu

1/2 cup, Soy Sauce

2 tablespoons, Sesame Oil

1 tablespoon, Grated Ginger

1/2 teaspoon, Brown Sugar

1/2 teaspoon, Red Chilli Flakes
TO ASSEMBLE
-
Warm Jasmine Rice
-
Thinly sliced Cucumbers
-
Thinly sliced Avocado
-
Thinly sliced Radishes
-
Thinly sliced Green Onions
-
Pickled Japanese Ginger
-
Edamame
-
Toasted Sesame Seeds
Directions
- Place Tofu between a few layers of paper towel, and top with a cutting board and weight it down with cans, etc. Allow to drain for 30 minutes.
- Cut Tofu into small cubes, and place in a bowl with remaining Poke ingredients. Stir to combine, and place in fridge for an hour to marinate.
- To assemble bowl, start with a base of warm rice, and top with Poke and remaining toppings to your liking.
