Treasure map pizza

Eat your way to the lost treasure!

Ingredients

  • 1 ball store bought pizza dough
  • 1 – 2 cups tomato or pizza sauce
  • 2 – 3 cups shredded mozzarella cheese
  • 1/2 cup wilted spinach
  • 1/2 cup cubed pancetta, cooked just under crisp – OR – cured salami, cut into ¼” x ¼” x 2” sticks
  • 1 sundried tomato halve, cut into strips
  • 1/4 cup sliced black olives, cut in half
  • Cornmeal, for baking

Directions

  1. Heat your oven to 475F and lightly dust a large rimmed baking sheet with cornmeal.
  2. Form your pizza dough into a rough rectangle and stretch the crust until it is to your desired thickness.  Try to keep the rectangle shape but don’t worry if it’s a bit off – I’m pretty sure a pirate’s treasure map was never the most neat and tidy document!
  3. Place your stretched dough out onto your prepared baking sheet and top with the tomato sauce and shredded cheese.  Now, it’s time to decorate!  Place down some dots of wilted spinach to form the tops of trees around your pizza map.  For the trunks of the trees, use either the cubed pancetta dotted in a line or the cured salami sticks.  Now, place down two sundried tomato strips in the shape of an ‘X’ somewhere on your pizza and, using the halved olives, make a dotted line that runs from one side of your map to the ‘X’ that marks the spot!
  4. If you aren’t a fan of spinach and sundried tomatoes, feel free to change up any of the toppings!
  5. Bake your pizzas in the preheated oven for 10 – 15 minutes or until the crust is crisp and the cheese is melted and starting to turn a little golden brown.
