Ingredients
CANDIED BACON

227 grams (1/2 lb.). bacon slices (1/4 inch thick diced)

1/4 bag brown sugar
FRIED BANANA

1 banana sliced 1/2 inch (semi ripe, ripe yellow with green tips)

Cooking oil (needed to fry one side at a time)

Cinnamon sprinkle

PANCAKES

2 bananas
-
2 eggs

1/4 teaspoon cinnamon

Maple syrup, to serve

Whipped cream

Peanut butter

Chocolate spread (melted chocolate chips)

Directions
CANDIED BACON
- Combine bacon and brown sugar in a mixing bowl and mix until evenly coated on all sides. Then add in maple syrup and further mix evenly.
- Spread evenly over a baking sheet and bake in oven for 10 to 12 minutes at 400 F.
- Drain and use or drain and cool and save for later.
FRIED BANANA
- Preheat cooking oil in pan and preheat ready to fry.
- Gently sprinkle sugar over bananas and toss.
- Gently place banana in oil and fry until golden brown
- Remove from oil and place on paper towel to remove access grease.
PANCAKE STACK
- In a bowl, mash the banana with a fork.
- Add eggs and cinnamon. Mix until combined.
- Heat a nonstick skillet over medium heat. Add a spoonful of batter and cook for three to four minutes, then flip and cook for an additional three to four minutes.
