Two-way banana stack

Ingredients

CANDIED BACON

  • 227 grams (1/2 lb.). bacon slices (1/4 inch thick diced)
  • 1/4 bag brown sugar

FRIED BANANA

  • 1 banana sliced 1/2 inch (semi ripe, ripe yellow with green tips)
  • Cooking oil (needed to fry one side at a time)
  • Cinnamon sprinkle
  • Sugar sprinkle

PANCAKES

  • 2 bananas
  • 2 eggs
  • 1/4 teaspoon cinnamon
  • Maple syrup, to serve
  • Whipped cream
  • Peanut butter
  • Chocolate spread (melted chocolate chips)
  • Fried bananas
  • Candied bacon

Directions

CANDIED BACON

  1. Combine bacon and brown sugar in a mixing bowl and mix until evenly coated on all sides. Then add in maple syrup and further mix evenly.
  2. Spread evenly over a baking sheet and bake in oven for 10 to 12 minutes at 400 F.
  3. Drain and use or drain and cool and save for later.

FRIED BANANA

  1. Preheat cooking oil in pan and preheat ready to fry.
  2. Gently sprinkle sugar over bananas and toss.
  3. Gently place banana in oil and fry until golden brown
  4. Remove from oil and place on paper towel to remove access grease.

PANCAKE STACK

  1. In a bowl, mash the banana with a fork.
  2. Add eggs and cinnamon. Mix until combined.
  3. Heat a nonstick skillet over medium heat. Add a spoonful of batter and cook for three to four minutes, then flip and cook for an additional three to four minutes.
