Macerated berries sit atop a light and dreamy meringue in this classic pavlova dessert. Easy enough for the home cook, it's a surefire way to say 'I love you' this Valentine's Day.
Ingredients
Macerated berries:
7 strawberries, cut in half
6 blackberries, cut in half
1/4 cup blueberries
1 teaspoon sugar
1 teaspoon lemon juice
Meringue:
4 large egg whites, room temperature
3/4 cups sugar
1 teaspoon corn starch
1 teaspoon lemon juice
1 teaspoon vanilla extract
Dark chocolate chips:
1/4 cup dark chocolate chips
1/3 cup heavy cream
2 baked meringue
Macerated berries
Roasted shelled pistachio
Directions
Macerated berries:
Macerate berries with the sugar and lemon juice and put aside until assembly.
Meringue:
Preheat the oven to 250 degrees.
In a stainless steal bowl, whisk your egg whites until soft peaks form. Gradually add sugar and beat for three minutes or until stiff peaks form. It will be smooth, thick, and glossy.
Tip- if you wish to use an electric mixer to make the meringue, it will be easier on your arm and faster.
Use a spatula to quickly fold in lemon juice, vanilla extract, and corn starch and mix until well combined.
Line a baking sheet with parchment paper. Free form dollops of meringue the shape of a football on the baking sheet and indent the centre with a spoon creating a divot for the berries.
Bake at 250 degrees for 1.5 hours then turn off oven. Do not open the door! Let meringue sit in the hot oven another one hour.
Tip- you can make the baked meringue a few days before and store in a Tupperware container in a cool dry place.
Assembly:
In a food processor, pulse the chocolate into smaller bits. Bring cream up to a boil and with the food processor on, add the hot cream and spin until chocolate has melted. It will look smooth and glossy.
Place meringue on the centre of the plate. Spoon a healthy portion of berries on top of the meringue, drizzle the hot liquid chocolate all over the berries, and top with pistachios. Enjoy!!
Tip- this recipe will make enough for two desserts but because it's Valentine's Day, it might be nice to make one and share.
