Vegan chia pudding with strawberry nice cream
Ingredients
- 2 1/2 cups almond milk unsweetened
- 1/2 banana, ripe
- 2 dates, pitted
- 1/2 cup chia seeds
- 2 cups banana ripe, frozen, sliced
- 1/2 cup strawberries, frozen
- 2 strawberries, fresh
Directions
CHIA PUDDING
- Blend two cups of almond milk (or any nut milk), dates and ripe banana.
- Transfer into a bowl and stir in the chia seeds.
- Pour the pudding equally into two glasses and refrigerate for an hour or until set (overnight is best).
NICE CREAM
- Just before serving, blend 1/2 cup of almond milk, frozen bananas and frozen strawberries into a nice cream consistency.
TO SERVE
- Wash cut fresh strawberries into thin slices and arrange around the chia pudding glasses - if you're after a fancy presentation.
- Pour nice cream over the chia puddings.
- Top with fresh strawberries or any fruit you like.
