Watermelon Caesar cocktail

Tomatoes with watermelon is a simple, refreshing, and perfectly balanced combination.

Ingredients
Garnish
- 1 piece watermelon, cut into 2 inch/5cm wedges
- 1 chunk feta cheese, cut into 1-inch/2.5cm cubes
Rim
- 2 tablespoons kosher salt
- 1 lemon wedge
Cocktail
- 1 1/2 oz (45ml) tequila
- 2 oz watermelon juice
- 2 oz Caesar mix, mild
- 1/4 oz (7.5ml) simple syrup
- 1/4 oz (7.5ml) lemon juice
Directions
Garnish
- Prepare your garnish by skewering the watermelon and feta.
- Set aside for garnish.
Rim
- Pour the salt onto a small plate. Circle the rim of your glass with the lemon wedge, then roll the rim in the salt.
Cocktail
- Pour tequila, watermelon juice, Caesar mix, simple syrup, and lemon juice into a cocktail shaker (or another mixing vessel). Fill the shaker with ice to just above the top of the liquid and stir with a bar spoon until the outside of the shaker is very cold to the touch.
- Fill the rimmed glass three-quarters full with fresh cube dice. Strain the contents of the shaker into the glass and top with additional ice if desired. Garnish with the skewer. Enjoy!
