Wheat berry salad with citrus dressing

Kale, oranges and toasted walnuts fill this wheat berry salad with sweet and savoury flavours. Serve it as a side dish or made it ahead for lunch.

Wheat Berry Salad
- 1 cup wheat berries, dry
- 3/4 cup toasted walnut pieces
- 1 apple, diced
- 1-2 oranges, peeled and cut into small segments
- 1 1/2 cups finely chopped kale
Citrus Dressing
- 3 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon lemon juice
- 1 tablespoon orange juice
- 2 tablespoons honey
- Salt and black pepper, to taste
Directions
Wheat Berry Salad
- Rinse wheat berries underwater. Cook according to package directions. (Or, place wheat berries in a large pot and add four to five cups of water. Bring to a boil, then reduce heat to medium-low and cook uncovered for about 40 minutes to one hour or until tender.) The cooked wheat berries will still have a “bite” and chewiness. Drain and cool.
- While the wheat berries are cooking, toast the walnut pieces in a toaster oven or in a skillet for two to three minutes on medium heat. Watch carefully as nuts can toast very quickly.
- In a large bowl, combine the wheat berries, apple, oranges, kale and walnuts. Set aside for serving.
Citrus Dressing
- In a small bowl, whisk olive oil, apple cider vinegar, lemon juice, orange juice, and honey together.
- Set aside for serving.
Serve
- Pour dressing over salad. Toss to combine.
- Add salt and pepper to taste. Enjoy!
