Kale, oranges and toasted walnuts fill this wheat berry salad with sweet and savoury flavours. Serve it as a side dish or made it ahead for lunch.

Wheat Berry Salad
1 cup wheat berries, dry
3/4 cup toasted walnut pieces
1 apple, diced
1-2 oranges, peeled and cut into small segments
1 1/2 cups finely chopped kale
Citrus Dressing
3 tablespoons olive oil
1 tablespoon apple cider vinegar
1 tablespoon lemon juice
1 tablespoon orange juice
2 tablespoons honey
Salt and black pepper, to taste

Wheat Berry Salad
Rinse wheat berries underwater. Cook according to package directions. (Or, place wheat berries in a large pot and add four to five cups of water. Bring to a boil, then reduce heat to medium-low and cook uncovered for about 40 minutes to one hour or until tender.) The cooked wheat berries will still have a “bite” and chewiness. Drain and cool.
While the wheat berries are cooking, toast the walnut pieces in a toaster oven or in a skillet for two to three minutes on medium heat. Watch carefully as nuts can toast very quickly.
In a large bowl, combine the wheat berries, apple, oranges, kale and walnuts. Set aside for serving.
Citrus Dressing
In a small bowl, whisk olive oil, apple cider vinegar, lemon juice, orange juice, and honey together.
