Whipped Cottage Cheese With Fruit & Nuts

Ingredients
- 1 3/4 cups 2 percent cottage cheese or 2 percent plain Greek yogurt
- 2 1/2 tablespoons lemon juice
- 1 1/2 tablespoons maple syrup
- 1 cup sliced strawberries
- 1/2 teaspoon cinnamon (optional)
- 2 1/2 tablespoons chopped raw walnuts or pecans
Directions
- Place the cottage cheese in a food processor and pulse until it is smooth.
- Add the lemon juice and maple syrup and pulse until the mixture is well incorporated.
- Set aside 1/2 the cottage cheese mixture for Saturday’s snack.
- Place the remaining cottage cheese in a serving bowl and top with the strawberries, cinnamon, and chopped walnuts.
Lemon lover? For extra flavor, stir 1/2 teaspoon lemon zest into the cottage cheese mixture.
