White bean, chorizo and red pepper foil packets

Make your campfire dinner a no-brainer with these delicious flavour-packed white bean, chorizo and red pepper foil packets.

Ingredients

White bean, chorizo and red pepper foil packets

  • 1 yellow pepper, sliced
  • 1 red pepper, sliced
  • ½ can white beans, rinsed
  • 2 fully cooked chorizo sausages, cut into ½” pieces
  • ½ bunch parsley, finely chopped
  • 50 ml passata or tomato puree
  • 2 tablespoons butter

Directions

  1. Divide your red pepper, yellow pepper, white beans and chorizo amongst two foil packets. Top with passata, parsley and butter.
  2. Close the packets and place them in the coals of your fire for 10 minutes. Remove and open, top with more parsley if desired. Enjoy!
