Parmesan chicken fingers

Delicious chicken tenders breaded in an Italian parmesan panko mixture and baked to crispy perfection! Easy to make, these tenders make for a kid-friendly snack or a delightful dinner the entire family will devour.

Ingredients

  • 4 boneless skinless chicken breasts
  • Salt and black pepper
  • 1 egg
  • 4 tablespoons mayonnaise
  • 1.2 cup panko breadcrumbs
  • 1/2 cup ground parmesan cheese
  • 1 1/2 teaspoons Italian seasoning
  • 1 to 2 tablespoons olive oil

Directions

  1. Preheat the oven to 375ºF and lightly grease a sheet pan with non-stick cooking spray or line with aluminum foil, dull side up.
  2. Prepare the chicken breasts by removing the tender from each and slicing the breasts into four or five long pieces that are about the same size as the tenders. Season with salt and pepper.
  3. In a shallow dish, beat the egg and mayonnaise together.
  4. In another shallow dish, combine the panko, Parmesan, and Italian seasoning. Season with salt and pepper, add in the oil and stir well to combine. Dunk a few of the tenders in the egg mixture then press into the breadcrumb mixture to coat. Continue with the rest of the tenders, placing the coated pieces onto one of the baking sheets, leaving space between each.
  5. Bake the tenders for 20 to 25 minutes or until cooked through to 165ºF. Allow the chicken to rest for about five minutes before serving. Enjoy!
