Ingredients
For the Cake
- ½ cup unsalted butter, room temperature
- ½ cup sugar
- ½ cup light brown sugar
- 2 eggs
- 1 ½ teaspoons vanilla
- 1 cup plain yogurt
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
For the Streusel
- ½ cup brown sugar
- ½ cup all-purpose flour
- 1 tablespoon cinnamon
- ½ teaspoon salt
- ¾ cup pecan pieces
- 1/3 cup butter, melted
- 1 apple, peeled and diced into about 1 cm cubes
Directions
- Heat your oven to 350ºF and lightly grease a bundt pan with non-stick cooking spray.
- For the cake, in a large bowl, cream together the butter and sugars until slightly pale and fluffy. Add in the eggs one at a time, beating well after each addition, then stir in the vanilla and yogurt. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Add the dry mixture to the wet and stir just until combined. Set aside.
- For the streusel, combine the brown sugar, flour, cinnamon, salt, and pecan pieces in a small bowl. Add the melted butter and mix until crumbly. Stir in the diced apple and set aside.
- To assemble, pour half of the cake batter into the prepared pan then evenly scatter with half of the streusel mixture. Carefully cover with the remaining cake batter and, finally, top with the remaining streusel mixture.
- Bake for 50 to 60 minutes or until a toothpick inserted into the centre comes out clean.
- Allow the cake to cool slightly in the pan then turn out on a wire rack to cool to room temperature.
