Ingredients
- ¼ cup breadcrumbs
- ¼ cup milk
- Olive oil
- 1 yellow onion, finely minced
- Salt & pepper
- 2 garlic cloves, minced
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- ½ teaspoon chili powder
- ¼–½ teaspoons cayenne pepper
- 1 egg
- 2 tablespoons finely chopped parsley
- 450–500g ground chicken
- ½ cup cayenne pepper hot sauce
- 3 tablespoons butter, melted
For Serving
- ½ cup buttermilk
- ¼ cup sour cream
- ¼ cup mayonnaise
- 3 tablespoons finely chopped dill
- 2 tablespoons finely chopped chives
- 1 teaspoon onion powder
- ½ cup crumbled blue cheese, plus more for serving
- Salt & pepper
- 4 stalks celery, thinly sliced, leaves reserved
Directions
- Heat your oven to 400ºF and line a sheet pan with parchment paper or spray well with non-stick cooking spray.
- Add the breadcrumbs and milk to a large bowl and set aside to hydrate.
- Place a medium sauté pan over medium heat and add in a teaspoon or two of oil as well as the onion. Season with salt and pepper and cook, stirring occasionally, until tender and lightly golden, about 5 minutes. Stir in the garlic, cumin, smoked paprika, chili powder, and cayenne and continue to cook for 30 seconds then transfer the onion mixture to the breadcrumb mixture and set aside to cool.
- Once cool, add in the egg, parsley, and ground chicken. Season with salt and pepper and, using two forks, mix well to combine. Scoop the mixture into about 2 tablespoon portions and roll into meatballs. Place on the prepared sheet pan and roast for 20 minutes or until the internal temperature reaches 165ºF.
- In a large bowl, whisk together the cayenne pepper hot sauce and butter. Toss the meatballs into the sauce and set aside.
- Meanwhile, prepare the dressing by whisking together the buttermilk, sour cream, mayonnaise, dill, parsley, chives, and onion powder in a large bowl. Stir in most of the crumbled blue cheese and season to taste with salt and lots of pepper.
- To serve, spread the dressing down onto a serving plate and top with the sliced celery and meatballs. Scatter with a bit more blue cheese, a few herbs, and some celery leaves.
