Caramelized Onion Dip and Chilli Crisp (The Good Stuff)

Ingredients

  • 2 cups caramelized onions (recipe here)
  • 2 ⅔ cups sour cream
  • ½ cup mayonnaise
  • 2 tsp onion powder
  • 2 tsp salt
  • 2 tbsp sugar
  • chopped chives
  • 1 tbsp chilli crisp

Directions

  1. Start: Heat butter in a large pan over medium-low. Add onions, garlic, and pinch of salt.
  2. Boost Browning: Sprinkle baking soda evenly over onions. Stir well to coat.
  3. Caramelize: Cook for 15–20 minutes, stirring occasionally, until onions are deep golden and garlic is soft. If browning too fast, lower heat and add a little water to loosen. Finish it with a splash of sherry vinegar. Cool and roughly chop.
  4. Mix Dip: In a bowl, combine sour cream and mayonnaise until smooth.
  5. Finish: Stir in onion-garlic mix, onion powder, salt, and sugar. Adjust seasoning.
  6. Rest: Chill at least 1 hour before serving.
  7. Garnish: Sprinkle chopped chives and garnish with a spoon of chilli crisp.
