1 ½ cups grated white cheddar or gruyere cheese, divided
2–3 handfuls baby spinach
Directions
Bring a large pot of water to a boil and season well with salt. If the gnocchi are stuck together, break them apart and add them to the boiling water. Cook according to the package directions. Scoop out about ½ cup of the cooking liquid and set aside. Drain the gnocchi and set aside.
Meanwhile, add the cream to a shallow oven safe skillet or braiser and place over medium heat. Add in the garlic and mustard, season with salt, pepper, and nutmeg, and bring to a simmer. Simmer the cream for 6 to 8 minutes until slightly thickened then stir in ½ cup of the grated cheese along with the spinach and cooked gnocchi.
Scatter the remaining cup of grated cheese overtop and transfer the pan to the upper rack of your oven. Broil the gnocchi on high for 2 to 3 minutes until golden brown and bubbling.
Set the gnocchi aside for a couple minutes to cool slightly before serving.
