Ingredients

  • 8 ounces semisweet chocolate
  • 3 eggs, room temperature
  • 1 cup whipping cream

Directions

  1. Set the chocolate in a double boiler. Stir to completely melt the chocolate and set aside to cool slightly.
  2. In a medium bowl beat together the 3 eggs.
  3. While whisking continuously, slowly stream the eggs into the melted chocolate. The mixture will start to tighten up and become glossy. .
  4. Beat the cream in the bowl of a stand mixer, until stiff peaks form. Then fold into the chocolate and egg mixture.
  5. Transfer the mixture into small ramekins or into a large serving bowl.
  6. Serve garnished with chocolate shavings or more whipped cream.
