Chocolate Mousse

Ingredients
- 8 ounces semisweet chocolate
- 3 eggs, room temperature
- 1 cup whipping cream
Directions
- Set the chocolate in a double boiler. Stir to completely melt the chocolate and set aside to cool slightly.
- In a medium bowl beat together the 3 eggs.
- While whisking continuously, slowly stream the eggs into the melted chocolate. The mixture will start to tighten up and become glossy. .
- Beat the cream in the bowl of a stand mixer, until stiff peaks form. Then fold into the chocolate and egg mixture.
- Transfer the mixture into small ramekins or into a large serving bowl.
- Serve garnished with chocolate shavings or more whipped cream.
