Coconut Rice with Hoisin Meatballs

Ingredients

For the rice

  • 1 ½ cups long-grain rice
  • 1 can (400ml) full fat coconut milk
  • 1 ½ cups chicken broth
  • 1/2 tsp garlic powder
  • ¼ tsp chili flakes
  • ½ tsp salt
  • ½ red pepper, finely chopped
  • ½ green pepper, finely chopped
  • 1 cup frozen mixed vegetables (peas,corns carrots)

For the meatballs

  • ½ cup bread crumbs
  • 1 egg
  • 2 green onions, sliced
  • 1 tablespoon grated ginger
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • 1 lb ground turkey (or beef)
  • ½ cup hoisin sauce
  • Chopped cashews, for garnish
  • Green onions, for garnish

Directions

  1. Preheat the oven to 350°F
  2. Rinse the rice well. Add the drained rice to a 9-x13-inch casserole dish. Stir in the coconut milk, chicken broth, garlic powder, chili flakes,salt, red pepper, green pepper and mixed vegetables.
  3. In a mixing bowl, add the bread crumbs, egg, green onions, ginger, garlic and onion powder and salt. Mix well to combine. Add the ground turkey and mix everything together.
  4. Shape the turkey mixture into 12 meatballs. Place the meatballs on top of the rice. Brush the meatballs with some of the hoisin sauce.
  5. Cover the casserole tightly with aluminum foil and bake for about 45-55 minutes until the rice has absorbed all the liquid and is cooked. Remove from the oven and allow to rest for 5 minutes.
  6. Brush the meatballs with more hoisin sauce and return to the oven for 5 minutes.
  7. Remove from the oven and garnish with cashews and green onions.
  8. Serve.

Tip: Sheet pan dinners are great. But you can also use casserole dishes to cook grains on the bottom with proteins on top or mixed in. This method works for other grains like barley and quinoa as well.

Tip #2: Cut a piece of parchment paper a little larger than the casserole dish. Crumple it up and then open it again. Fit it inside the casserole dish before adding other ingredients. This makes for a really easy clean up. Works great with mac and cheese or fruit crumbles as well.
