Crispy Salami Bites

Ingredients

  • 24 thin slices of sweet/hot salami
  • 1 cup crumbled feta
  • ½ cup chopped kalamata olives
  • ½ cup chopped sundried tomatoes
  • ¼ cup caramelized onions
  • ¼ cup chopped toasted walnuts
  • 2 tbsp chopped flat leaf parsley

Directions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Place the salami slices over each compartment of a mini muffin tray. Using a small glass, push the salami into the compartments to form a cup. Bake for 8-10 minutes. Then transfer to a paper towel to drain and cool.
  3. To a medium bowl, add the feta, olives, sundried tomatoes, caramelized onions, walnuts and parsley. Mix well.
  4. Add a spoonful of the feta mixture to each crispy salami cup. Serve immediately.
