Place the salami slices over each compartment of a mini muffin tray. Using a small glass, push the salami into the compartments to form a cup. Bake for 8-10 minutes. Then transfer to a paper towel to drain and cool.
To a medium bowl, add the feta, olives, sundried tomatoes, caramelized onions, walnuts and parsley. Mix well.
Add a spoonful of the feta mixture to each crispy salami cup. Serve immediately.
