Easy Skillet Shrimp with Feta

Ingredients

  • 1 tablespoon olive oil
  • ½ red onion sliced
  • 1 clove garlic, sliced
  • 150g fresh spinach
  • ¼ teaspoon chili flakes
  • 1 can (400g) cherry tomatoes
  • 450g jumbo shrimp
  • 200g feta cheese, crumbled
  • Salt and Pepper to taste

Directions

  1. Place a skillet over medium heat. Add the olive oil, red onion, garlic and chili flakes. Cook for 2 minutes until the onion is soft. Add the spinach and cover with a lid. Cook for 2-3 minutes until the spinach is wilted.
  2. Turn the heat to medium-high. Pour in the cherry tomatoes and bring to a simmer.
  3. Add the shrimp and cook, stirring occasionally for about 6-8 minutes until the shrimp has cooked through.
  4. Season with salt and pepper to taste. Scatter the feta cheese over the top and serve.
