Falafel Waffles

Falafel Waffles

Ingredients

  • 1 box (approx. 330g) falafel mix
  • Olive oil
  • 1 ½ cups plain Greek yogurt
  • 1–2 garlic cloves, minced
  • 1 lemon
  • Salt & pepper
  • 1 cucumber, diced
  • 2 cups cherry tomatoes, halved
  • ¼–½ diced red onion
  • ½ teaspoon dry oregano
  • ¼ cup chopped dill and/or mint
  • Olive oil
  • 1 cup crumbled feta cheese

Directions

  1. Heat your oven to 200ºF. Prepare the full box of the falafel mix according to the package directions, adding 2 tablespoons of olive oil. 
  2. Heat your waffle iron and thoroughly grease both sides of each well with non-stick cooking spray. Divide the falafel mixture into four roughly equal portions and scoop one portion into the centre of each well. Depending on your waffle iron, you may need to work in batches. Close the waffle iron to press the falafel mixture and cook until golden brown and crisp, about 5 to 6 minutes, depending on your waffle iron. Keep the waffles warm in the low oven.
  3. In a medium bowl, whisk together the yogurt and garlic with the zest of the lemon. Add in the juice from half of the lemon, saving the other half for later, and season with salt and pepper.
  4. In a separate bowl, stir together the cucumber, tomatoes, onion, dry oregano, and the dill and/or mint. Add in the juice from the remaining half of the lemon, a swig of olive oil, and season with salt and pepper. Toss well to combine.
  5. To serve, divide the yogurt sauce between four plates and top each with a waffle. Spoon over the salad and scatter with the feta.
