Fresh Zucchini Salad

Ingredients

  • 1 shallot, thinly sliced
  • 1 lemon, zested and juiced
  • Salt & pepper
  • 2–4 tablespoons olive oil
  • 2 zucchinis
  • 4–6 tablespoons toasted slivered or sliced almonds or sunflower seeds
  • Small handful of basil and/or mint, roughly torn

Directions

  1. Add the shallot, lemon zest, and lemon juice to a large bowl and season with salt and pepper. Set aside for a couple minutes just to lightly pickle the shallot.
  2. Whisk in the oil and, using a vegetable peeler, thinly slice the zucchinis into the bowl in long strips. Add in the nuts or seeds as well as the herbs and toss well to evenly coat. Season with more salt and pepper and serve.
