Fully Loaded Butter Chicken Nachos

Ingredients

For the Butter Chicken

  • 1 cup strained tomato sauce (passata)
  • ⅓ cup butter
  • 1 tbsp kasoori methi
  • ½ tbsp garam masala
  • 1 tsp Kashmiri chili powder
  • ½ tbsp granulated sugar
  • Kosher salt to taste
  • 1 cup 35% whipping cream
  • Kosher salt to taste
  • 2 cups rotisserie chicken breast, cut into small cubes

To Assemble

  • 1 package corn tortilla chips
  • 3 cups shredded TexMex cheese
  • ½ cup finely chopped red onion
  • ¼ cup chopped coriander
  • ¼ cup pickled jalapeños
  • ¼ cup pickled banana peppers
  • ¼ cup thinly sliced green onions
  • ¾ cup sour cream

Directions

  1. Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Add butter, strained tomato sauce, kasoori methi, garam masala and sugar to a frying pan, and season with salt to taste. Bring to a simmer and cook for 12-15 minutes, or until the tomatoes have reduced down, and the fats in the pan began to crackle along their edges.
  3. Pour in cream, and mix. Then add in chopped chicken and simmer for 3 minutes to heat through.
  4. Spread the tortilla chips across the baking sheet. Top with half of the cheese, and pour the butter chicken mixture over the surface. Top with the remaining cheese.
  5. Place in the oven and bake for 5-10 minutes or until the cheese has melted.
  6. Garnish with red onion, coriander, pickled jalapenos, pickled banana peppers, green onions and sour cream. Enjoy!
