Ingredients
For the Butter Chicken
- 1 cup strained tomato sauce (passata)
- ⅓ cup butter
- 1 tbsp kasoori methi
- ½ tbsp garam masala
- 1 tsp Kashmiri chili powder
- ½ tbsp granulated sugar
- Kosher salt to taste
- 1 cup 35% whipping cream
- Kosher salt to taste
- 2 cups rotisserie chicken breast, cut into small cubes
To Assemble
- 1 package corn tortilla chips
- 3 cups shredded TexMex cheese
- ½ cup finely chopped red onion
- ¼ cup chopped coriander
- ¼ cup pickled jalapeños
- ¼ cup pickled banana peppers
- ¼ cup thinly sliced green onions
- ¾ cup sour cream
Directions
- Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
- Add butter, strained tomato sauce, kasoori methi, garam masala and sugar to a frying pan, and season with salt to taste. Bring to a simmer and cook for 12-15 minutes, or until the tomatoes have reduced down, and the fats in the pan began to crackle along their edges.
- Pour in cream, and mix. Then add in chopped chicken and simmer for 3 minutes to heat through.
- Spread the tortilla chips across the baking sheet. Top with half of the cheese, and pour the butter chicken mixture over the surface. Top with the remaining cheese.
- Place in the oven and bake for 5-10 minutes or until the cheese has melted.
- Garnish with red onion, coriander, pickled jalapenos, pickled banana peppers, green onions and sour cream. Enjoy!
