Ingredients
4 cups all-purpose flour
2 tbsp baking powder
½ tsp salt
1½ tsp sugar
2½ to 3 cups lukewarm water, enough to form a soft dough
Vegetable oil or lard, for frying
2 to 3 tbsp fresh dill, finely chopped (optional for fish recipes)
Directions
In a large bowl, combine the flour, baking powder, salt, and sugar. If serving with fish, stir in the fresh chopped dill.
Gradually add the lukewarm water a bit at a time, mixing until the dough is soft and slightly sticky. It should hold its shape and be thick and spoonable, but not as runny as pancake batter.
In a large frying pan over medium heat, add enough oil to fully coat the bottom of the pan.
Once the oil is hot, drop scoopfuls of dough into the pan.
Dip your spoon into the hot oil before scooping the next spoonful of dough to help prevent sticking.
Cook until bubbles appear on the surface and the underside is golden brown.
Using tongs or a fork, carefully flip the bannock and cook the other side until golden brown.
Transfer to a plate lined with paper towel to absorb any excess oil.
