The Burwash Auntie’s Fish

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp salt (or to taste)½ tsp black pepper
  • 1 tsp garlic powder
  • Additional seasonings of choice such as paprika, lemon pepper, Cajun seasoning, or seasoning salt
  • Fish fillets, cleaned and filleted (trout recommended)
  • Vegetable shortening, for frying
  • 1 medium onion, sliced

Directions

  1. Prepare the trout by cleaning and filleting if needed. Pat the fillets completely dry with paper towel and set aside.
  2. In a shallow dish, combine the flour, salt, pepper, garlic powder, and any additional seasonings. Mix well.
  3. Coat the trout fillets in the seasoned flour mixture until evenly coated on all sides, then shake off any excess.
  4. Place a large frying pan over medium heat and add a generous spoonful of shortening. Allow it to melt completely and become hot before adding the fish.
  5. Add the sliced onion and cook for 2 to 3 minutes, stirring occasionally, until softened and fragrant.
  6. Place the coated fish fillets into the hot pan and fry for 3 to 5 minutes per side, depending on thickness, until golden brown and crispy. The fish is done when it flakes easily with a fork.
  7. Serve hot, topped with the fried onion.
