Dry-Brined Turkey Drums

Ingredients

  • 4 Turkey Drumsticks
  • 2 1/4 tbsp smoked salt
  • 2 1/4 tbsp brown sugar
  • 1 orange, zested
  • 1/4 bunch thyme, chopped
  • 1/4 bunch rosemary, chopped
  • 1 tbsp black pepper
  • 1 tbsp smoked paprika
  • 1 tbsp coriander
  • 2 tsp fennel
  • 1/4 tsp chili flakes

Directions

  1. In a mixing bowl, combine the smoked salt, sugar, orange zest, herbs, and spices.
  2. Pat the turkey drums dry then apply the mixture all over.
  3. Place the turkey on a wire rack (placed over a sheet tray) and let sit in the fridge overnight to dry-brine.
  4. When ready to cook, wash off the dry-brine and bring the turkey to room temperature.
  5. Roast in a pre-heated 350 degree oven (again on a wire rack on top of a sheet tray) for 50-55 minutes, or until the internal temperature reaches 180 degrees.
  6. Wrap the drumstick handle in parchment paper then enjoy!
