In a mixing bowl, combine the smoked salt, sugar, orange zest, herbs, and spices.
Pat the turkey drums dry then apply the mixture all over.
Place the turkey on a wire rack (placed over a sheet tray) and let sit in the fridge overnight to dry-brine.
When ready to cook, wash off the dry-brine and bring the turkey to room temperature.
Roast in a pre-heated 350 degree oven (again on a wire rack on top of a sheet tray) for 50-55 minutes, or until the internal temperature reaches 180 degrees.
