Peach BBQ Sauce

Ingredients

Basic BBQ Rub (makes about 1½ cups/375 mL):

  • ½ cup (56 g) sweet paprika
  • ¼ cup (50 g) packed light brown sugar
  • 2 Tbsp (8 g) ground cumin
  • 2 Tbsp (8 g) ground coriander
  • 2 Tbsp (8 g) dry mustard powder
  • 2 Tbsp (34 g) fine salt
  • 1 Tbsp (4 g) granulated garlic or garlic powder
  • 1 Tbsp (8 g) black pepper

BBQ Sauce:

  • 1 cup (250 mL) tomato passata
  • 1 medium onion, diced
  • 2 cloves garlic, sliced
  • ¼ cup (60 mL) white vinegar
  • ¼ cup (60 mL) peach or apricot jam
  • 2 Tbsp (30 mL) pomegranate molasses
  • 2 fresh peaches, peeled and diced
  • 1 jalapeño pepper, seeded and diced (optional)
  • 2 Tbsp (30 mL) Basic BBQ Rub (above)
  • 3 to 4 dashes Worcestershire sauce

Directions

For the Basic BBQ Rub:

  1. Stir all of these spices together in a bowl and store in an airtight container.

For the BBQ Sauce:

  1. In a saucepot over medium heat, gently simmer all the ingredients for about 20 minutes, until the onions are tender.
  2. Purée the sauce and set aside until ready to use.

The spice rub will keep for up to 6 months in an airtight container. The BBQ sauce will keep for 2 weeks in the fridge.
