Sunday Super Bake

Ingredients

  • 2 cups of Arborio Rice
  • 1 heaping teaspoon Vegetta or other stock-like seasoning
  • 10 cherry tomatoes, halved
  • 2 tbsp diced red onion
  • ½ of a roasted red pepper, sliced into small pieces
  • 2 tsp capers
  • 4 tbsp corn
  • ½ tsp oregano leaves
  • 1-2 cooked sausages, sliced
  • 1 cup baby spinach
  • 600 ml tomato sauce
  • ½ cup grated parmesan cheese
  • ½ cup of water

Directions

  1. Preheat oven to 350 degrees.
  2. Rinse rice in cold water and add it into a large oven-proof dish.
  3. Mix in the Vegetta, cherry tomatoes, red onion, roasted red pepper, capers, corn, oregano leaves, cooked sausage, baby spinach, tomato sauce, parmesan cheese, and water.
  4. Bake for 45 minutes and enjoy!
