Ingredients
- 5 oz Amber Rum
- 5 oz spiced Rum
- 5 oz Campari
- 8 oz Herbed Raspberry Shrub*
- 4 oz lime juice
- 10 oz passion fruit juice
- 2 oz Angostura Bitters
- 2 cups raspberries, for garnish
- 2 sliced limes, for garnish
*Herbed Raspberry Shrub (Yield 2 Cups):
- 1 cup ripe raspberries
- 1 cup apple cider vinegar
- 3/4 cup raw honey
- 1/4 tsp chili powder
- Handful of herbs such as mint, basil, and/or tarragon
Directions
- In a large pitcher, at least 60 oz, combine all ingredients except the raspberries and lime slices.
- Stir to combine.
- Chill in the refrigerator until ready to serve.
- Before serving, give it a quick stir.
- Pack the jug full of ice cubes for dilution and temperature control.
- Pour into small rocks glasses filled with ice.
- Garnish with raspberries and lime slices.
For the Herbed Raspberry Shrub:
- In a mason jar, muddle raspberries to release flavour.
- Add apple cider vinegar, honey, and chili powder. Stir until integrated.
- Chop herbs, add to the jar, and stir.
- Seal and place in a cool, dark area for 24–48 hours. Shake 2–3 times during infusion.
- Strain solids, bottle, and refrigerate for up to 6 months.
