Portuguese Style Coconut Buns

Ingredients

  • 12 pack mini brioche buns/sweet rolls
  • 1 cup sweetened dessicated coconut
  • ¼ cup granulated sugar
  • 2 tbsp milk
  • 1 tbsp butter, melted
  • 1 large egg
  • 1 egg yolk
  • ½ tsp vanilla
  • ¼ tsp kosher salt
  • Powdered sugar, for dusting

Directions

  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper. Place the brioche buns on the baking sheet without separating them. 
  2. To a medium bowl, add the coconut, sugar, milk, melted butter, whole egg, egg yolk, vanilla, and kosher salt. Mix with a spoon until creamy and smooth.  
  3. Spread the coconut mixture evenly over the buns to cover.  
  4. Bake for 12-13 minutes, or until the coconut is slightly golden.  
  5. Cool for 15 minutes. Then dust with powdered sugar before serving.
