Quick Pickled Stone Fruit

Ingredients

  • 2 cups white vinegar
  • ½ cup water
  • 1 bay leaf
  • 3-4 allspice berries
  • 1 tsp pickling spice
  • 2-3 tsp kosher salt
  • 1-3 tsp cane sugar (feel free to sub for honey or maple syrup, but expect slight flavour variance in end product)
  • 2 garlic cloves, optional
  • 2 peaches, halved and sliced to approximate ¼” thickness
  • 2 plums

Directions

  1. Place vinegar, water, spices, salt and sugar (and garlic if using) in a medium pot and bring to a gentle simmer on medium heat. 
  2. Place sliced fruit into a heatsafe bowl or container and pour hot pickling liquid over top. 
  3. Let come to near-room temperature before covering and placing in the fridge. 
  4. Once cool, can use as desired and keep up to one month in fridge—noting that the tangy flavour will gradually intensify over time.
