Quick Pickled Stone Fruit Ingredients
- 2 cups white vinegar
- ½ cup water
- 1 bay leaf
- 3-4 allspice berries
- 1 tsp pickling spice
- 2-3 tsp kosher salt
- 1-3 tsp cane sugar (feel free to sub for honey or maple syrup, but expect slight flavour variance in end product)
- 2 garlic cloves, optional
- 2 peaches, halved and sliced to approximate ¼” thickness
- 2 plums
Directions
- Place vinegar, water, spices, salt and sugar (and garlic if using) in a medium pot and bring to a gentle simmer on medium heat.
- Place sliced fruit into a heatsafe bowl or container and pour hot pickling liquid over top.
- Let come to near-room temperature before covering and placing in the fridge.
- Once cool, can use as desired and keep up to one month in fridge—noting that the tangy flavour will gradually intensify over time.
