Directions
Add the cornstarch and cocoa powder to a medium pot along with about ½ cup of the milk. Whisk well until no lumps remain. Whisk in the remaining milk along with the cream and place the pot over medium heat. Bring the milk mixture to a low simmer, whisking frequently, until slightly thickened.
Remove the pot from the heat and add in the chocolate. Set aside for 2 minutes to allow the chocolate to melt then add in the vanilla and whisk to combine. Season with a pinch of salt and some sugar, if needed, to taste. If you’d like, whisk in a little cinnamon, nutmeg, or instant espresso powder for an added kick of flavour.
