Bougie Grilled Cheese

Ingredients
- 2 slices white sourdough bread
- 3 slices brick mozzarella
- 2 slices black truffle gouda
- 20gr grated parmigiano reggiano
- 3 tbsp softened salted butter
- 2 tbsp red pepper jelly
- 3 tbsp good quality pesto to dip
- 3-4 cornichons pickles
Directions
- Add the sliced mozzarella to one side of the sliced bread
- Add the sliced truffle gouda on top of the sliced mozzarella
- Slather the red pepper jelly onto the other slice of bread
- Close the sandwich
- Layer both sides of the exterior slices of bread with the butter. Be generous here
- Sprinkle both sides of the grated parmesan onto the buttered bread slices
- Use a medium size non stick pan and place onto medium high heat
- Add buttered sandwich into pan and cook for about 2-3 minutes or until golden brown
- Gently flip the sandwich and cook for another 2 minutes or so or until golden brown again
- Once golden brown on both sides, remove from heat and let rest for 1 minutes before cutting in half
- Serve with pesto as a dip and garnish with cornichons pickles
