Miso & Mayo Epic Chicken Salad

Miso & Mayo Chicken Sandwiches

Ingredients

  • 454g cooked chicken breast
  • 1 ½ cups small diced, green cabbage
  • ½ cup small diced, red onion
  • ½ cup corn niblets
  • ½ cup mayonnaise
  • ½ cup plain yogurt
  • 2 tablespoons white or yellow miso paste
  • 1 tablespoon lemon juice
  • 1 tablespoon liquid honey
  • 3 tablespoons finely chopped, cilantro + more for garnish
  • 1 tablespoon toasted sesame seeds + more for garnish
  • Pepper

Directions

  1. Cut the chicken breast into small dice. Add the chicken to a mixing bowl along with the cabbage, red onion and corn.
  2. In a separate bowl, whisk together the mayonnaise, yogurt and miso paste until the miso is completely dissolved and mixed through. Stir in the lemon juice and honey. Season with pepper to taste.
  3. Add the miso mayonnaise to the chicken mixture and mix to combine. Mix in the cilantro and sesame seeds.
  4. Serve on a toasted bun or on a bed of salad greens garnished with more cilantro and sesame seeds.
