Coffee and Coriander Beef Ribs with Pomegranate BBQ Sauce

Ingredients

  • 2lb Beef back ribs
  • 1 tbsp coriander seeds, toasted and finely ground 
  • 1 tbsp Arabic coffee
  • 1/2 tsp sugar
  • 1/2 tsp chili flakes

For the BBQ Sauce

  • 2 tbsp olive oil
  • 3 cloves garlic, finely minced
  • 1/2 white onion, minced
  • 1 tbsp minced ginger
  • 1 tsp paprika
  • 1 tsp cinnamon 
  • 1/2 tsp chili flakes
  • 1 cup ketchup
  • 1/2 cup balsamic vinegar
  • 1/4 cup pomegranate molasses
  • 1/3 cup brown sugar
  • 1/2 tsp salt

Directions

  1. Preheat the oven to 300 degrees. 
  2. Mix the coriander, coffee, sugar, and chili flakes in a small bowl.  Rub the seasoning all over the ribs. 
  3. Wrap the ribs tightly in foil, the wrap again in another piece of foil.  Place on a baking sheet then transfer to the oven for 3 hours. 
  4. Make the sauce next.  Heat the oil in a pot over medium low heat then add the garlic, onion, and ginger.  Sweat for 8-10 minutes or until soft and translucent. Add the paprika, cinnamon, and chili flakes and cook for another minute. Add the ketchup, vinegar, molasses, sugar, salt, and 1 cup of water.  Bring the sauce to a boil then simmer over low heat for 25-30 minutes or unitl dark and thickened. 
  5. When the ribs are done, coat in the sauce.  Grill for 1-2 minutes to gently caramelize then apply a little more sauce.  Enjoy!
