Crock Pot French Onion Soup

Ingredients

  • 3lb of cooking onions, sliced
  • 3 sprigs fresh thyme
  • 1 cup red wine
  • ¼ cup butter
  • 3 tablespoons soya sauce
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon brown sugar
  • ¼ cup all purpose flour
  • 1 teaspoon pepper
  • 6 cups beef broth
  • 1 Baguette, sliced and toasted
  • 1 cup grated Swiss cheese

Directions

  1. To a slow cooker, add the onions, thyme, red wine, butter, soya sauce, balsamic vinegar, brown sugar,flour and pepper.. Set the temperature to high, and cook for 5 hours.
  2. Open the slow cooker and stir everything together. Pour in the 6 cups of beef broth, stir everything together. Warm through for 5 minutes to bring up to temperature.
  3. Ladle some soup into bowls. Top with the toasted baguette, sprinkle cheese over the top. Place the soup bowls on a baking sheet.
  4. Turn the broiler to low, broil the soup for 5-6 minutes until the cheese is melted and golden brown.
