Farmers Market Grilled Chicken Platter

Ingredients

Chicken:

  • 2 tbsp smoked paprika
  • 1 tbsp cumin
  • 1½ tsp salt
  • ½ tsp pepper
  • ⅓ cup olive oil
  • 4 chicken legs

Veggies:

  • 4 portobello mushrooms, stems removed
  • 15-20 asparagus spears
  • 1 tbsp smoked paprika
  • ½ tbsp cumin
  • 1 tsp salt
  • ¼ tsp pepper
  • ¼ cup olive oil

Directions

For the Chicken:

  1. Combine olive oil and seasoning in a large bowl.
  2. Coat chicken legs in oil/seasoning mixture.
  3. Grill skin side down on low flame for 20 minutes.
  4. Flip and grill for another 10 minutes.
  5. Increase heat and continue to grill and flip as necessary until the internal temp has reached 160F.
  6. Move to the cool side of the grill to rest while the veggies grill.

For the Veggies:

  1. Combine olive oil and seasoning in a baking tray or casserole dish.
  2. Coat mushrooms and asparagus in oil/seasoning mixture.
  3. Grill on medium-high flame for 5-10 minutes. Flip and rotate as necessary. Slice portabellos after grilling.
  4. Plate chicken, mushrooms, and asparagus with pickles and pickled cabbage or sauerkraut! Finish with a nice squeeze of lemon and sprinkle of salt to taste.
