Ingredients
Chicken:
- 2 tbsp smoked paprika
- 1 tbsp cumin
- 1½ tsp salt
- ½ tsp pepper
- ⅓ cup olive oil
- 4 chicken legs
Veggies:
- 4 portobello mushrooms, stems removed
- 15-20 asparagus spears
- 1 tbsp smoked paprika
- ½ tbsp cumin
- 1 tsp salt
- ¼ tsp pepper
- ¼ cup olive oil
Directions
For the Chicken:
- Combine olive oil and seasoning in a large bowl.
- Coat chicken legs in oil/seasoning mixture.
- Grill skin side down on low flame for 20 minutes.
- Flip and grill for another 10 minutes.
- Increase heat and continue to grill and flip as necessary until the internal temp has reached 160F.
- Move to the cool side of the grill to rest while the veggies grill.
For the Veggies:
- Combine olive oil and seasoning in a baking tray or casserole dish.
- Coat mushrooms and asparagus in oil/seasoning mixture.
- Grill on medium-high flame for 5-10 minutes. Flip and rotate as necessary. Slice portabellos after grilling.
- Plate chicken, mushrooms, and asparagus with pickles and pickled cabbage or sauerkraut! Finish with a nice squeeze of lemon and sprinkle of salt to taste.
