Halloumi Cheese Burgers

Halloumi Cheese Burgers

1 burger

Ingredients

  • 2 x thick slices of halloumi seared (35gr each slice)
  • 1 brioche burger bun (slightly toasted)
  • 30ml black olive tapenade
  • A few drizzles of hot honey
  • 1 field tomato sliced
  • A few thin slices of cucumber
  • A few thin slices of red onion
  • 30ml Greek yogurt
  • 1 handful of finely chopped dill
  • 1 handful of finely chopped mint
  • 1 handful of finely chopped flat leaf parsely
  • 1 garlic clove pureed
  • 1/4 lemon juiced
  • A few drizzles of olive oil
  • Salt and pepper

Directions

Burger sauce:

  1. In a mixing bowl, add Greek yogurt, mint, dill, parsley, garlic and lemon juice and mix together to incorporate all ingredients
  2. Season with salt and pepper and set to the side

Seared halloumi:

  1. Add a drizzle of olive oil to a non stick pan and set to medium high heat
  2. Gently add haloomi slices to the pan and sear on bottom side for about 2 minutes or until golden brown, once golden, turn over and cook for another 60-90 second or until golden brown
  3. Remove from heat and set to the side (once the halloumi is resting, drizzle hot honey on both slices)

Building the burger:

  1. On the bottom side of the burger bun, slather it with the black olive tapenade
  2. On the top side of the bun, slather the ready made tzaziki
  3. Add cooked halloumi slices onto bottom side of the bun
  4. Than a layer of tomato onto the halloumi and then a layer of cucumber onto the tomato slices and lastly a few slices of red onion
  5. Put burger buns together and enjoy
