| 1 burger |
Ingredients
- 2 x thick slices of halloumi seared (35gr each slice)
- 1 brioche burger bun (slightly toasted)
- 30ml black olive tapenade
- A few drizzles of hot honey
- 1 field tomato sliced
- A few thin slices of cucumber
- A few thin slices of red onion
- 30ml Greek yogurt
- 1 handful of finely chopped dill
- 1 handful of finely chopped mint
- 1 handful of finely chopped flat leaf parsely
- 1 garlic clove pureed
- 1/4 lemon juiced
- A few drizzles of olive oil
- Salt and pepper
Directions
Burger sauce:
- In a mixing bowl, add Greek yogurt, mint, dill, parsley, garlic and lemon juice and mix together to incorporate all ingredients
- Season with salt and pepper and set to the side
Seared halloumi:
- Add a drizzle of olive oil to a non stick pan and set to medium high heat
- Gently add haloomi slices to the pan and sear on bottom side for about 2 minutes or until golden brown, once golden, turn over and cook for another 60-90 second or until golden brown
- Remove from heat and set to the side (once the halloumi is resting, drizzle hot honey on both slices)
Building the burger:
- On the bottom side of the burger bun, slather it with the black olive tapenade
- On the top side of the bun, slather the ready made tzaziki
- Add cooked halloumi slices onto bottom side of the bun
- Than a layer of tomato onto the halloumi and then a layer of cucumber onto the tomato slices and lastly a few slices of red onion
- Put burger buns together and enjoy
