Homemade Pita

Ingredients

  • 1 cup lukewarm water
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 2 ¼ cup all purpose flour
  • 1 tsp kosher salt
  • Olive oil

Directions

  1. To a small bowl add the water, yeast, and sugar. Stir and wait until the mixture puffs up.
  2. Whisk the all purpose flour and salt together in a large bowl. Add the wet ingredients, and mix to form a shaggy ball of dough. Knead for 5 minutes in the bowl, cover with a damp dish cloth, and let the dough rise for 1 hour or until doubled in volume.
  3. Divide the dough into 6 equal pieces, shape into balls, and place on a baking tray. Cover and rest again for 10 minutes.
  4. Shape the dough ball into 6 inch circles. Heat a large frying pan on medium-high heat. Brush the bottom of the pan with a bit of olive oil, and place the dough round in the middle. Cook for 2 minutes on each side or until puffy and golden.
