Ingredients
Jalapeño mayo:
- ¼ cup pickled jalapeños, minced
- 1 cup mayo
- 1 tbsp honey
Smash burgers:
- 12oz of 80/20 ground beef
- Salt
- Jalapeño cheddar or Pepperjack cheese
- Pickled jalapeños
Assembly:
- sesame seed buns
- Jalapeño mayo
- Shredded lettuce
- Smash burgers
Directions
For the Jalapeño mayo:
- Mix all ingredients and set aside.
For the Smash burgers:
- Divide ground beef into 4, 3oz meat balls.
- Season generously with salt and lay into a hot flat top grill, or grilled. You could also use a large cast iron skillet.
- Cover each meatball with a small square piece of parchment paper and press down firmly with a meat-weight until flat. Allow to cook for 2-3 minutes or until nicely caramelized. Flip, top with cheese and pickled jalapeños. Cook for another 1-2 minutes or until the cheese is melty.
