Jerk Spiced Salmon with Mango Salsa

Ingredients

For the Salmon

  • 4 (approx. 200g each) salmon fillets
  • Salt
  • 2–3 tablespoons storebought jerk paste
  • Olive oil

For the Salsa and Serving

  • 1 mango, diced
  • 1 avocado, diced
  • ½ cup pineapple, diced, optional
  • 2 green onions, thinly sliced
  • 1 shallot, finely diced
  • ½–1 jalapeno pepper, finely diced
  • 2 limes, divided
  • Olive oil
  • Salt & pepper

Directions

  1. Heat your oven to 400ºF and line a sheet pan with parchment paper.
  2. Lay the salmon onto the prepared sheet pan and season with salt. Season with salt and brush over the jerk paste. Drizzle the salmon with olive oil and roast for 12 to 15 minutes or until the flesh flakes easily with a fork.
  3. Meanwhile, make the salsa by combining the mango, avocado, pineapple, green onions, shallot, and jalapeno pepper. Add in the zest and juice of 1 lime along with a drizzle of oil. Season with salt and pepper and toss well to combine.
  4. Cut the remaining lime into quarters and serve the salmon hot or chilled with the salsa spooned over top and a lime wedge on the side.
