Ingredients
Pulled Pork:
- 3lb boneless pork shoulder
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1/2 tsp chipotle powder
- 2 tsp salt
- 1 tsp black pepper
- 1 cup maple syrup
- 3 cups beef stock
- 3 tbsp soy sauce
- 1/4 cup red wine vinegar
- 4 cloves garlic
- 1/2 white onion, chopped
Maple BBQ Sauce:
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 white onion, minced
- 1 tbsp ginger, freshly minced
- 1 tsp smoked paprika
- 1 tsp cinnamon
- 1/2 tsp chili flakes
- 1 cup ketchup
- 1/2 cup apple cider vinegar
- 1/2 cup maple syrup
- 1/2 tsp salt
Directions
For the Pulled Pork:
- Combine the paprika, garlic powder, onion powder, thyme, chipotle, salt, and pepper in a bowl.
- Rub all over the pork shoulder, then heat the oil over medium high heat in a large dutch oven.
- Sear on all sides until golden brown then add the stock, soy, maple syrup, vinegar, garlic, and onion.
- Cover then transfer to a pre-heated 300 degree oven and slowly cook for 3-4 hours or until tender and able to shred with a fork.
- Remove from the oven, then shred into pulled pork! Sauce and serve!
For the Maple BBQ Sauce:
- Heat the olive oil in a pot over medium-low heat.
- Sweat the garlic, onion, and ginger for 8-10 minutes or unitl soft and translucent.
- Add the paprika, cinnamon, and chili flakes and cook for an additional minute. Then add the ketchup, vinegar, maple syrup, salt, and 1 cup of water.
- Bring the sauce up to a boil then reduce to a simmer and cook over a low heat for 30 minutes, or until the sauce has darkened and thickened.
