One Pan Pizza Chicken

Ingredients

  • 2 pounds baby new potatoes
  • 2 tablespoons Italian seasoning
  • 3 tablespoons finely grated parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 colourful bell peppers, thinly sliced
  • 4 teaspoons olive oil, divided
  • 4 skinless boneless chicken breasts (about 1 pound)
  • 1/2 cup pizza sauce
  • 4 ounces fresh mozzarella cheese, sliced
  • ¼ cup sliced turkey pepperoni
  • ¼ cup sliced olives

Directions

  1. Preheat an oven to 400 degrees F. Prepare a large rimmed baking sheet with nonstick cooking spray, and set aside. 
  2. Meanwhile, add the new potatoes to a pot and cover with cold salted water. Bring to a boil, then simmer for 10-15 minutes, until fork tender. Drain the potatoes and allow to cool before cutting into quarters and adding to a large bowl along with the sliced pepper peppers and 2 teaspoons of olive oil.  
  3. In a small bowl, combine the Italian seasoning, parmesan cheese, salt, and pepper. Add half of the seasoning mixture to the vegetables and toss well to coat. 
  4. Spread the potatoes and bell peppers out onto the prepared baking sheet. 
  5. Next, season the chicken breasts with the remaining seasoning mixture. Heat the remaining olive oil in a large skillet over medium-high heat. Add the chicken breasts to the hot pan and cook until golden brown, about 4-5 minutes on each side.  
  6. Transfer the cooked chicken breasts to the baking pan with the potatoes and bell peppers. Bake at 400 degrees F for 15 minutes. Remove from the oven and carefully spoon the pizza sauce over the top of the chicken breasts, then top with the mozzarella cheese, pepperoni, and olives. Return to the oven and bake an additional 10 minutes, or until the cheese is melty and browned, and the chicken reaches an internal temperature of 165 F. Enjoy sizzling hot!
