Radicchio with Maple & Miso

Ingredients

  • 1 tbsp white miso
  • Juice from ½ of a lemon
  • 1 tbsp sesame oil
  • 1 tbsp Dijon mustard
  • ⅛ cup maple syrup
  • ½ tsp salt
  • 1 large head of Raddichio, roughly chopped
  • 1 cup of pecorino, grated
  • ⅓ cup salted pistachios, chopped
  • ¼ cup chives, finely sliced

Directions

  1. Mix white miso, lemon juice, Dijon, maple syrup and salt in a large mixing bowl.
  2. Toss Radicchio and half of the amount of pecorino in the dressing.
  3. Plate and top with the rest of the pecorino, pistachio, and chives.
