Ingredients
- 5–6 small/medium-sized beets
Dressing / Mix:
- 3⁄4 cup Greek yogurt
- Zest and juice from 1 lemon
- 1⁄2 cup dill (extra for garnish)
- 1⁄4 cup honey
- 1 tbsp black sesame seeds
Directions
For the Beets:
- Wrap in foil and roast at 400°F for 90 minutes or until easily pierceable with a knife.
- Let cool long enough to handle.
- Plunge into a large bowl of cold water and peel the skin away.
- Rough chop and set aside to cool completely.
For the Dressing / Mix:
- Mix everything together then fold in cooled, roasted beets.
- Top with extra dill and sesame seeds! Enjoy!
