Roasted Beet Salad

Ingredients

  • 5–6 small/medium-sized beets

Dressing / Mix:

  • 3⁄4 cup Greek yogurt
  • Zest and juice from 1 lemon
  • 1⁄2 cup dill (extra for garnish)
  • 1⁄4 cup honey
  • 1 tbsp black sesame seeds

Directions

For the Beets:

  1. Wrap in foil and roast at 400°F for 90 minutes or until easily pierceable with a knife.
  2. Let cool long enough to handle.
  3. Plunge into a large bowl of cold water and peel the skin away.
  4. Rough chop and set aside to cool completely.

For the Dressing / Mix:

  1. Mix everything together then fold in cooled, roasted beets.
  2. Top with extra dill and sesame seeds! Enjoy!
