Roasted Veggie Frittata

Ingredients
- 2 cups roasted veggies, roughly chopped
- 6 large eggs
- ¼ cup milk
- Salt and black pepper, to taste
- 1 cup shredded cheese (optional)
Directions
- Preheat oven to 375°F (190°C).
- In a medium bowl, whisk together eggs, milk, salt, and pepper until well combined.
- Lightly grease an oven-safe skillet or baking dish. Spread the roasted veggies evenly in the base.
- Pour the egg mixture over the vegetables. Sprinkle cheese evenly over the top, if using.
- Bake until the center is just set and no longer jiggly. Remove from oven and let rest for 5 minutes before slicing and serving.
