Roasted Veggie Frittata

Ingredients

  • 2 cups roasted veggies, roughly chopped
  • 6 large eggs
  • ¼ cup milk
  • Salt and black pepper, to taste
  • 1 cup shredded cheese (optional)

Directions

  1. Preheat oven to 375°F (190°C).
  2. In a medium bowl, whisk together eggs, milk, salt, and pepper until well combined.
  3. Lightly grease an oven-safe skillet or baking dish. Spread the roasted veggies evenly in the base.
  4. Pour the egg mixture over the vegetables. Sprinkle cheese evenly over the top, if using.
  5. Bake until the center is just set and no longer jiggly. Remove from oven and let rest for 5 minutes before slicing and serving.
