Roasted Veggie Wrap

Ingredients

  • 1½–2 cups roasted veggies
  • Large flour tortillas or wraps
  • Fresh greens (spinach or spring mix)
  • Shredded rotisserie or leftover chicken (optional)

Spreads & Additional Toppings:

  • Hummus
  • Tzatziki
  • Crumbled feta/goat cheese
  • Greek dressing or Italian dressing

Directions

  1. Spread hummus or tzatziki down the center of the wrap. Add a handful of fresh greens, followed by warm roasted veggies. Top with shredded chicken, if using.
  2. Finish with crumbled feta/goat cheese or a drizzle of Greek or Italian dressing.
  3. Fold in the sides and roll tightly. Slice in half and enjoy!
