No-Baked Strawberry Shortcake Crunch Fudge Bars

Ingredients

Base

  • 1 ½ cups crushed shortbread or vanilla cookies
  • 6 tablespoons melted butter
  • Pinch of salt

Fudge Layer

  • 1 ½ cups white chocolate chips
  • ½ cup evaporated milk
  • 1/2 cup chopped strawberry Pocky (about 1 box)
  • 1 teaspoon vanilla extract
  • Optional: 1–2 drops pink food coloring

Topping (Crunch Layer)

  • 1 cup crushed vanilla cookies (or Golden Oreos)
  • Optional (if available): ½ cup crushed freeze-dried strawberries

Directions

Make the Base:

  1. Mix crushed cookies, melted butter, and salt.
  2. Press firmly into a lined pan (8x8 recommended).
  3. Chill while preparing the filling.

Make the Fudge:

  1. Heat evaporated milk until warm (not boiling).
  2. Pour over white chocolate chips.
  3. Let sit 1 minute, then stir until smooth.

Mix in:

  1. Vanilla extract
  2. Chopped Pocky
  3. Optional pink color

Assemble:

  1. Pour fudge over base and spread evenly.

Add Crunch Topping:

  1. Mix crushed cookies with melted butter.
  2. Sprinkle evenly over fudge.
  3. (Optional: add freeze-dried strawberries for extra color).

Chill & Slice:

  1. Refrigerate 1–2 hours until set
  2. Slice into clean bars
