Ingredients
Base
- 1 ½ cups crushed shortbread or vanilla cookies
- 6 tablespoons melted butter
- Pinch of salt
Fudge Layer
- 1 ½ cups white chocolate chips
- ½ cup evaporated milk
- 1/2 cup chopped strawberry Pocky (about 1 box)
- 1 teaspoon vanilla extract
- Optional: 1–2 drops pink food coloring
Topping (Crunch Layer)
- 1 cup crushed vanilla cookies (or Golden Oreos)
- Optional (if available): ½ cup crushed freeze-dried strawberries
Directions
Make the Base:
- Mix crushed cookies, melted butter, and salt.
- Press firmly into a lined pan (8x8 recommended).
- Chill while preparing the filling.
Make the Fudge:
- Heat evaporated milk until warm (not boiling).
- Pour over white chocolate chips.
- Let sit 1 minute, then stir until smooth.
Mix in:
- Vanilla extract
- Chopped Pocky
- Optional pink color
Assemble:
- Pour fudge over base and spread evenly.
Add Crunch Topping:
- Mix crushed cookies with melted butter.
- Sprinkle evenly over fudge.
- (Optional: add freeze-dried strawberries for extra color).
Chill & Slice:
- Refrigerate 1–2 hours until set
- Slice into clean bars
