Tahini

Ingredients

For the Tahini (Tashi):

  • 1 cup tahini pulp
  • 1/3 cup fresh lemon juice
  • 1 large garlic clove
  • 1/3 cup + 2 tbsps ice water
  • 1 tsp sea salt

For the Garnish:

  • Extra-virgin olive oil
  • finely chopped Italian flat leaf parsley

Directions

  1. In a blender or food processor, add tahini, lemon juice, garlic and salt. Pulse a few times. With the motor running, slowly pour in ice water and puree until smooth.
  2. Garnish with olive oil and parsley

Tip: Tahini can be refrigerated in an air tight container up to 2 weeks. Add tahini to salad dressings for creaminess and a nutty flavour.
