Whipped Feta with Spicy Giardiniera, Almonds and Dates
Ingredients
1 cup (8oz) feta cheese, crumbled
½ cup cream cheese
2 tbsp olive oil
1-2 tbsp fresh lemon juice
½ cup spicy giardiniera, muffaletta or antipasto packed in oil, drained with the oil reserved
2 medjool dates, finely chopped
¼ cup roughly chopped almonds
Directions
Place the feta, cream cheese, olive oil and lemon juice in a food processor. Pulse until smooth. Place in a shallow bowl and create divots on the surface.
Mix the spicy giardiniera with dates and almonds.
Spoon the mixture over the whipped feta then drizzle with reserved oil.
