Whipped Feta with Spicy Giardiniera, Almonds and Dates

Ingredients

  • 1 cup (8oz) feta cheese, crumbled
  • ½ cup cream cheese
  • 2 tbsp olive oil
  • 1-2 tbsp fresh lemon juice
  • ½ cup spicy giardiniera, muffaletta or antipasto packed in oil, drained with the oil reserved
  • 2 medjool dates, finely chopped
  • ¼ cup roughly chopped almonds

Directions

  1. Place the feta, cream cheese, olive oil and lemon juice in a food processor. Pulse until smooth. Place in a shallow bowl and create divots on the surface.
  2. Mix the spicy giardiniera with dates and almonds.
  3. Spoon the mixture over the whipped feta then drizzle with reserved oil.
  4. Serve with pita, focaccia and crudites.
