Passover style deviled eggs

Kettle Recipe:

Hard Boiled Eggs in a Kettle

Best for a kettle without heating coils inside (electric kettle).

Ingredients

  • 4-6 eggs (any kind)

Directions

  1. Place 4-6 eggs in the kettle, depending on size, and cover with water. Make sure eggs do not have any cracks.
  2. Turn kettle on and allow to boil.
  3. Once kettle turns off, let sit for 10 minutes.
  4. Carefully remove eggs, place in cold water for 10 minutes.

Eat as a snack, or make egg salad sandwiches or wraps.

Fridge Recipe:

Hummus & Vegetable Wrap

Buying a small vegetable tray can be very beneficial for students as it’s already washed, cut, and ready to eat.

Ingredients

  • 2 large tortillas
  • 1/2 cup hummus
  • 1/4 cup each: cucumbers, red peppers, red onions, tomato, carrot
  • Big handful of lettuce
  • 2 tbsp of feta or cheese of choice
  • 1 can of chickpeas, drained and rinsed
  • Optional: 1-2 tsp balsamic glaze
  • Optional: Pickles, roasted red pepper, sundried tomatoes, olives

Directions

  1. Slice vegetables like cucumber, red pepper, onion, and tomato, very thin.
  2. Grate carrots and chop lettuce.
  3. Crush chickpeas.
  4. On the tortilla, spread a generous amount of hummus. Top with crushed chickpeas and drizzle with balsamic glaze, if using.
  5. Top with vegetables, cheese, and lettuce.
  6. Wrap carefully and enjoy!

MICROWAVE RECIPES:

“Baked” Oatmeal in a Mug, Pancake in a Mug, Omelette in a Mug

Please note all microwaves are different and cooking times may differ.

Ingredients for “Baked” Oatmeal

  • 1/2 banana
  • 1 egg
  • 1/2 cup rolled oats
  • 1 tbsp flaxseed/hemp hearts
  • 1/2 cup milk of choice
  • 2 tsp sweetener (honey or sugar)
  • 1/4 tsp cinnamon
  • 1/2 cup berries (optional)
  • 2 tbsp nut butter to top (optional)

Directions

  1. Mix everything in a mug except the berries and nut butter. Mix until everything is well combined.
  2. Stir in berries and microwave on high for 2-4 minutes, all microwaves will vary.
  3. Start with 2 minutes and add on 30 seconds at a time until cooked through.

I like to top mine with a drizzle of nut butter.

Ingredients for Pancake

  • 1/2 cup flour
  • 2 tbsp skim milk powder
  • 1 tsp baking powder
  • 1 tbsp maple syrup
  • 1/2 cup milk of choice
  • 1 egg

Directions

  1. Mix everything together in a microwave safe mug and cook on high for 2 minutes.
  2. Make sure you use a large mug because this pancake will rise!!
  3. Top with maple syrup or fruit and enjoy.

Ingredients for Omelette

  • 2 eggs
  • 1 tbsp milk or water
  • 1 tbsp grated cheese or feta
  • Salt & pepper to taste
  • 2-3 tbsp vegetables (like onions, pepper, mushrooms-if you have them)

Directions

  1. Mix everything together and cook on high for 30-45 seconds. Stir.
  2. Cook another 30 seconds and stir, if necessary.
  3. Cook for 15-20 second intervals until cooked through.
  4. Eat on it’s own, or add to toast/tortilla, and you’re good to go!
